One of my favorite Christmas traditions is baking cookies while listening to Christmas music. It’s a tradition that happens in most households, perhaps yours included. But it’s one of those things that feels deeply personal to me. It makes me slow down and truly embrace this season that goes by all too quickly. I know so many people feel the stress of the holidays, but it must be my slow paced upbringing, but I go even slower in these winter months. Someone once told me, “life is a gift, not an emergency.” I love that. Especially during this special season of joy.

This year Julian has been helping me in the kitchen more than ever, and baking cookies is one of his specialties. What child doesn’t love to sprinkle a cookie?! I am using my go-to sugar cookie recipe, one that you may remember from last year. It may take me longer than ever to bake 1 batch with this two Christmas cuties of mine, but this recipe is still being put to good use in our household.

I’m also working on showing you guys a little more of my Christmas decor at home. Lots of you have shown interest in our home styling, so I’m hoping to have that up in the next few days. Until then, here’s our home from last year!

CHRISTMAS COOKIES:

Ingredients:

¾ cup butter, room temp

1 cup sugar

1 egg

1 egg yolk

2 tsp vanilla

Grated rind of 1 lemon (orange works great too)

¼ tsp salt

2 ½ cups flour

Instructions:

With a standing mixer, beat the butter until creamy. Add the sugar and continue beating until light in color. On low speed beat in egg and egg yolk just until combined. Add vanilla, lemon rind and salt. Add the flour until blended, do not over beat batter. Form dough into a ball and wrap in plastic. Refrigerate for 30 minutes. Preheat oven to 375F. On a lightly floured surface, roll out dough and stamp with desired cookie cutters. Bake on a lightly greased baking sheet for approx 8-10 minutes. Allow to cool completely before decorating. Store in an airtight container if you don’t eat them all! Enjoy!

Inez’s nursery has quickly become one of my favorite rooms in our home. I spend so much time in her nursery, feeding and changing our girl, that the whole family always seems to follow. Before I know it, Julian is playing with his school buses on the chaise next to me, and Jet Pup is cozying up on the plush rug. Sometimes Jeff will come in to play with Jules on the floor, and I get to soak it all in while feeding Inez.

I love how the soft green walls add some more dimension to an otherwise very pink room. I promised Jeff I wouldn’t go too pink! The pale greens and pinks make it feel like a little secret garden in there. Piece by piece things came together very simply. I wanted to keep the room peaceful and feminine. I tend to be more of a minimalist right now when it comes to interior decor. These newborn days can feel so crazy sometimes, that it’s nice to have your space reflect some calm.

This vibrant pink rug is such a beautiful addition to the room. It’s so soft under bare feet, and I’ve said it before, but textiles bring a room together. The reason I opted for the chaise lounge instead of a traditional glider, is because I now have two babies! I knew that Julian would be following me into Inez’s room while I sat to nurse. This way, he can sit right beside me, instead of gazing up at me and asking me to sit on my already full lap.  The chaise is a beautiful statement piece and is one of my favorite spots in the room.

As you can probably imagine, I am in charge of desserts for Thanksgiving dinner in our family. Thanksgiving is my second favorite holiday, next to Christmas. Jeff and I have been hosting our families at our home for a few years now, and our Thanksgiving dinners hold some of my favorite memories. I love celebrating gratitude, good food and family. Jeff loves cooking, I love baking.

When it comes to Thanksgiving dinner, you don’t want to stray too far from traditional. People yearn for those same dishes they have been eating for years. My dad and I were just discussing his disastrous oyster stuffing of Thanksgivings past. He still claims it was delicious.

Pumpkin pie is a staple on every Thanksgiving table. But I have found that adding this one, simple ingredient takes it to the next level, without making it too experimental.

By adding a thin layer of chocolate between the pie crust and the pumpkin filling, the pie becomes oh so decadent. That’s right, chocolate! This pie is a hit at our Thanksgiving table, and the perfect addition to a Friendsgiving as well.

Ingredients:

  • 1 Perfect Pie Crust
  • 3/4 cup firmly packed brown sugar (I prefer dark)
  • 2 large eggs
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1 cup pumpkin puree
  • 1 1/2 cups heavy cream
  • 1/3 cup chocolate chips
  • Whipped cream for serving

Instructions:

  1. Prepare pie crust as directed. I always use my go-to perfect pie crust! But if you’re in a pinch, or just don’t feel like it that day, store bought works just fine too.
  2. Roll out 1 pie dough disk onto a lightly floured surface. Transfer to an ungreased pie dish and trim edge. Flute edges decoratively if you wish. Refrigerate crust until firm, about 30 minutes
  3. Preheat oven to 375F and place oven rack on lower third portion of oven.
  4. Cover crust completely with aluminum foil and pat the foil down against the crust. Fill with pie weights (rice works too) to prevent shrinking. Bake for approximately 25-30 minutes. Periodically checking on the crust and lifting the foil until it no longer appears wet in the center. Crust should still be pale in color. Remove crust from oven.
  5. Evenly spread chocolate chips over the bottom of pie crust. Return to oven until melted, only about 1 minute, then remove from oven. Decrease oven temp to 350F and move wire oven rack to center of oven.
  6. Whisk together brown sugar and eggs until well incorporated. Add spices and blend well. Add pumpkin puree, then cream until smooth. Pour into partially baked pie shell.
  7. Bake pie until the filling is firm in the middle, approximately 35-45 minutes. Center can wiggle slightly, but not jiggle!
  8. Serve with whipped cream once cooled. Enjoy!

How We Named Our Inez Marie

How we named our daughter, Inez Marie

I hadn’t planned on writing about how we named Inez, however, I have had so many questions on her name! I thought I would answer them here and share her naming story. First off, I want to clarify the pronunciation of her name. Which, I will say, I never thought I would have to do! It seemed obvious to both Jeff and I, but I suppose you never know until you announce. Our Inez’s name is pronounced “In-ez.” We’ve heard some pretty creative variations, but it’s simply, Inez. Just like it looks. Her name means “pure” and has Spanish origins, but that’s not why we chose it.

Years ago, when Jeff and I were dating, his father’s mother passed away. We traveled to Chehalis to attend her celebration of life. During the service, we both noticed the most beautiful name on the program book. Jeff’s Grandmother’s middle name was Inez. We both mentioned the name several times that day and on our way home. I can’t recall if we said it out loud then, or if it was just an unspoken agreement. But we knew that someday, if we were lucky enough to have a daughter, she would be named Inez.

We loved that it paid homage to Jeff’s family. We loved how unique, yet timeless the name felt. Settling on Marie as a middle name was simple, as we wanted to include a family name from my side as well. My Great Grandmother Winnifred’s middle name was Marie given to her by her Father in honor of her Mother Marie. My mom, and I both have Marie as a middle name. In fact, my dad often calls my mom Marie as her first name.

Our Julian Koki also has a family name. Named after his Japanese Grandfather, Koki. I love the idea that both of our children are watched over by family members before them.

Our Inez Marie is such a dream. I am currently working on writing her birth story, and cannot wait to show you all photos from the magical day she was born.

I am so thrilled it’s June already! Holy cow, that was a rough Winter and early Spring. Warmer weather and sunnier days means ICE CREAM! And I have had some serious ice cream cravings this pregnancy. I have been frequenting our local ice cream parlor a bit too much lately. And dang, that adds up. I decided it was time that I create my own tasty concoction at home.

Sharing an ice cream sundae with a loved one creates a lasting memory. I can still remember making sundaes with my mom in the summer when I was a little girl! I want Julian and our baby girl to have those same memories. I think I’m on the right track with this recipe, because Julian was in heaven! And baby girl was kicking up a storm!

You guys, these sundaes turned out to be out of the world delicious! And so easy! I stopped into our local Walmart to grab all of my ingredients and decided to make a fun twist out of the classic sundae. Instead of using plain vanilla ice cream, I decided to try Blue Bunny® PB ‘N Cones™! It has peanut butter swirls and bits of cone already mixed into the ice cream, so no need for an additional cone! Such a scrumptious twist on the traditional vanilla flavor. Smucker’s has a wide variety of ice cream toppings, but I opted for the classic Smucker’s Hot Fudge Spoonable Ice Cream Topping to complement my PB ‘N Cones ice cream selection. And how can you have a sundae without Reddi-Wip® original whipped topping? You just can’t. For fun embellishments I grabbed some delicious fresh fruit and tasty pecans. I finished the sundae with a fresh, homemade waffle as a fun garnish. Delicious! See the full recipe below!

Ingredients:

  • Blue Bunny® PB ‘N Cones™
  • Smucker’s Hot Fudge Spoonable Ice Cream Topping
  • Reddi-Wip® original whipped topping
  • 1 Banana
  • 1 pint of strawberries, hulled and quartered
  • Chopped pecans
  • Cherries
  • Fresh waffles, quartered for garnish (optional)

Instructions:

  1. Assemble sundae. Scoop two heaping scoops of PB ‘N Cones ice cream into dish
  2. Prepare Smucker’s Hot Fudge Spoonable Ice Cream Topping by microwaving with lid off for 30-45 seconds as label directs
  3. Top ice cream with generous amount of Smucker’s Hot Fudge Spoonable Ice Cream Topping
  4. Dress your sundae with desired amount of fresh fruits and nuts
  5. Top with a heaping dollop of Reddi-Wip® original whipped topping 
  6. Garnish with a slice of fresh waffle if desired
  7. Complete sundae with a cherry on top of your whipped cream
  8. Enjoy with someone you love!

Don’t ask me where the term “easy as pie” came from. Speaking as someone who loves to bake pies, and has been doing it for years, pie is not the simplest dessert to pull off. I find that every pie is a learning experience, and I still have plenty of pie fails. Well, this my friends, this recipe makes for a truly easy pie.

You can whip this delectable lemon pie up in just a matter of minutes (yes, seriously) and still be the hero of the dinner table. Now that my time is more limited (hello there, working mother to a toddler with a baby on the way here!) I am feeling inspired to create more simple recipes. Recipes that can still be showstoppers, but don’t take hours out of your day.

Just recently Jeff and Julian and I were walking around out in our backyard. Jules was running around barefoot, the sun was bright and warm, and I was getting all the springtime feels. When we went inside to put Jules down for a nap, I had the urge to bake something that would keep that springtime, sunshiney feeling alive all day. Enter this lemon pie creation. I’m on a lemon baking kick lately it seems. 

The filling is rich, but the bursts of lemon make it feel light. The simple addition of a whipped cream topping adds to the lightness that exemplifies a spring pie. Typically, I can eat decadent pies all day long. But there is something about the change in the season that calls for a lighter fare.

Ingredients:

Crust:

  • 1 ½ cup graham cracker crumbs
  • 6 Tbsp butter (melted)
  • 1/3 cup sugar
  • Pinch of salt

Filling

  • 3 egg yolks
  • 2 cans sweetened condensed milk
  • 2/3 cup fresh squeezed lemon juice (approx. 3 large lemons)
  • Zest of 1 lemon
  • Pinch of salt

Topping:

  • 1 cup heavy whipping cream
  • 2 Tbsp sugar
  • 1 tsp vanilla extract
  • Pinch of lemon zest (optional)

Instructions:

Preheat oven to 350F. In a medium sized bowl, mixed together graham cracker crumbs, melted butter, sugar and salt until well combined. Press the mixture into a greased pie pan, packing firmly. Bake for 7 minutes.

In a standing mixer on medium speed, beat together egg yolks, condensed milk, lemon juice, zest and salt until creamy, approximately 5 minutes. Add filling to baked pie crust and bake for 10 minutes. Allow to cool on wire rack for 30 minutes, then finish cooling in refrigerator for at least 1 hour to set.

Prepare whipped cream topping by beating heavy cream, sugar, vanilla and zest on high until fluffy. Top the pie with whipped cream and serve chilled. Enjoy!
